The cinnamon you have in your kitchen cabinet could be Cassia or Chinese cinnamon which is referred to as false cinnamon among experts. The Cassia tree bark has higher amounts of coumarin which is known to cause damage to the liver if consumed in excess.
Real cinnamon comes from the bark of the Cinnamomum Verum plant that grows in the rain forests and the plantations of Sri Lanka. Ceylon cinnamon compared to cassia is completely safe and has numerous health benefits.
The harvest of Ceylon cinnamon involves chopping of the shoots every 3 years, shaving off the inner bark which is then shade dried to make Ceylon Cinnamon.
